SCOTT CRAWFORD EXPANDS CRAWFORD HOSPITALITY, ANNOUNCES NEW ITALIAN/CROATIAN RESTAURANT, BRODETO

 

Raleigh, NC (November 30, 2022) Chef Scott Crawford is opening a new Italian/Croatian restaurant serving “Adriatic Cuisine” at Raleigh Iron Works, a mixed-use innovation hub developed by global real estate firm Jamestown and Raleigh-based developer Grubb Ventures. The restaurant, BRODETO, is expected to open in late 2023.

 

“We are proud to continue the growth of Crawford Hospitality with this exciting new concept,” said Chef Scott Crawford. “We think the partnership between Jamestown and Grubb Ventures at Raleigh Iron Works is brilliant, and we’re elated to be working with them. We searched for several years to find the right location for this project, and Raleigh Iron Works lends itself perfectly to the design we have in mind.”

 

“Chef Scott Crawford has played a central role in cultivating Raleigh’s burgeoning food scene in recent years,” said Michael Phillips, president of Jamestown. “New chef-driven restaurants like BRODETO will be an important part of the food & beverage experience at Raleigh Iron Works and further establish the city as a dining destination.”

 

Louis Cherry Architecture, the firm responsible for the interiors at Crawford’s other establishments –Crawford and Son, Jolie, and Crawford Cookshop – will design the 4,800-square-foot space. BRODETO will feature an open kitchen with a live fire hearth, outdoor dining garden, large bar, and a Crudo Counter.

 

Paul Tuorto, who created the branding for Crawford’s restaurants, as well as Crawford Hospitality, will help develop the restaurant’s brand identity. “The Mediterranean coast is as inspiring as it gets, especially the lesser-known flavors of the Adriatic,” said Tuorto. “The simplicity yet endless creativity of a ubiquitous dish like Brodeto speaks to the heart of Adriatic Cuisine and we’re stoked to share that experience with Raleigh.”

 

“This restaurant project will be an exploration. We will challenge ourselves in ways we never have,” continued Crawford. “The name ‘BRODETO’ comes from a craveable Fish Stew often cooked in a kettle over coals. This dish is made in Croatian regions of Dalmatia and Istria as well as almost all Italian Adriadic Coastal cities. I love this name because it connects Italy and Croatia in a meaningful way. It speaks to the use of today’s freshest ingredients coupled with time honored tradition.”

 

Crawford’s friend Richard Gruica, who introduced him to the food and culture of Croatia had this to say about the name: “When I think of Brodeto, I think comfort, sharing the meal with friends and family, smiles, stories, warmth…bringing people together over their joy of this unassuming dish.”

 

“When I heard Brodeto described this way by Richard, I realized he perfectly articulated how I want the food at this restaurant to make people feel,” offered Crawford. When I traveled to Adriatic Coastal cities of Croatia and Italy, the food I experienced was so simplistic yet flavorful. Impeccably fresh ingredients were cooked over coals and seasoned with beautiful oils & vinegars, local sea salts, bright herb sauces and comforting broths.”

 

At BRODETO, guests can expect a plethora of seafood, both raw and cooked, handmade pasta, rice dishes such as black risotto, and hearty dishes such coal roasted chicken, grilled meats, and Croatian Lamb Peka. Continued Crawford, “One of the things we’re most excited about is exploring the flavors of local vegetables cooked over embers.”

 

The Bar and Crudo Counter at BRODETO will be a great way for guests to engage with cooks and beverage creators. “We are passionate about raw dishes. The Crudo Counter will give us the opportunity to pursue this passion further and push the boundaries,” said Crawford.

 

Beverage Manager Jordan Joseph and Crawford both agree that simple, masterfully balanced cocktails will be the driving force of the Bar Program. There will be a focus on coastal flavor, coal grilled fruits & vegetables, infused salts, and bitters. Amari and herbal liqueurs will be plentiful. The list of wines will drive attention toward high energy, yielding coastal and mainland wine from Italy, Croatia, Slovenia, and the rest of the Adriatic. “The region has so much to offer and show. The flavor combinations are limitless between linking the best of what each territory can offer,” offered Crawford.

 

Chef Scott Crawford formed Crawford Hospitality in 2016 and later that year opened Crawford — a neighborhood restaurant honoring his family and commitment to community. In 2019, he opened Jolie — his love letter to his daughter. In 2021, he opened Crawford Cookshop — the group’s most casual restaurant, located on Main Street in Clayton. Crawford is also slated to open Crawford Brothers Steakhouse at Fenton in Cary and Crawford’s Genuine at Raleigh-Durham International Airport.

Chef Crawford is a five-time James Beard Foundation semifinalist for “Best Chef Southeast.” Crawford has also earned Forbes Five Star Awards at Herons at The Umstead Hotel & Spa, The Georgian Room at the Cloister Hotel, and The Woodlands Resort and Inn.

 

Crawford is committed to introducing inspired restaurants, cultivating a healthy work-life balance in the industry and mentoring food and beverage professionals. His leadership extends beyond the kitchen with his support of those in the industry who struggle with alcoholism and addiction.

 

Crawford also served on the Honorary Capital Campaign committee at Healing Transitions, a peer-based recovery program focused on offering services to homeless, uninsured, and underserved individuals with alcoholism and addiction. Together the committee helped raise over twenty million dollars for the facility’s expansion.

 

At Raleigh Iron Works, BRODETO will join a vibrant retail scene that includes “eatertainment” destination Jaguar Bolera, barrel room and restaurant Ponysaurus, sandwich shop Eastcut Sandwich Bar, and ice cream company Andia’s Ice Cream, as well as fitness concepts YoBa Studio and F(X). Located along Atlantic Avenue at the crossroads of Raleigh’s Five Points, Person Street, and Mordecai neighborhoods, Raleigh Iron Works includes the renovation of historic steel mills and warehouses into creative office and retail spaces, as well as the construction of a new, seven-story multi-family building.
